Our little boy has never had burgers or chips, but to set a good example, my husband and I have decided that for 2013 neither of us is allowed to have them either, unless they are homemade.

Being fairly resourceful and not wishing to miss out completely, I’ve been making a homemade, healthy version, which we really love! So here is the latest of our family recipes…

Ingredients (to feed 4 people):

  • 2 Large chicken breasts
  • 3 Teaspoons of olive oil
  • 4 Wholemeal rolls
  • 2 Avocados
  • 1 Teaspoon low fat mayonnaise (You can miss this out!)
  • 1 Tablespoon of greek yoghurt/craime fraiche or soured cream
  • 2 Medium Sweet Potatoes

1. Set the oven to 200°C.

2. Wash the sweet potatoes and chop into wedges, approximately 1.5cm thick. Put on a baking tray and drizzle with a teaspoon of olive oil. Place in the oven and cook for approximately 35-40 mins, turning once.

3. When you have 10 minutes left on the oven timer, begin preparing your burgers. Very carefully slice each chicken breast lengthways in half, to create 4 thin breast pieces. (It really doesn’t matter if you end up with more smaller pieces as it is quite tricky to cut them if they are oddly shaped).

4. Fry the chicken breast pieces in a tiny bit of olive oil until nicely browned on both sides. Feel free to add any seasoning, herbs, sweet chilli sauce or whatever you fancy. We like a little Worcestershire sauce and a dash of chilli powder.

5. While the chicken is cooking, mash your avocadoes until quite smooth and mix in 1 teaspoon of mayonnaise and a tablespoon of greek yoghurt/craime fraiche or soured cream.

6. Assemble your chicken ‘burgers’ by placing the cooked chicken pieces in the bread rolls with a large dollop of the avocado mayonnaise. Serve with the sweet potato chips.

Alternative recipe suggestions:

  • Why not marinate your chicken overnight in a nice sauce for more flavour? Experiment with different herbs, spices and sauces….or cook it plain!
  • Pressed for time? Why not have a simple salad instead of the sweet potato chips?
  • Entertaining friends? You could add some bacon and red onion to the burgers and grill the bread for a slightly ‘posher’ alternative.
  • Try roasting different veg as a side – white potato, carrot with a drizzle of honey and parsnip all taste delicious!
  • If you fancy making REAL burgers, grind your chicken breasts in a food processor, add some seasoning and red onion, then form into patties and grill or fry.
